Ingredients:

3 eggs

Olive oil

Handful of spinach

Onions, mushrooms, tomato (or veggies of choice)

Pepper & sea salt to taste

Directions:

Sautee veggies of choice in a small skillet. Meanwhile scramble eggs & seasonings in a small bowl. Add 1 tsp of olive oil to a separate skillet over medium heat. Add eggs to skillet. Cook on both sides as you would an omelet. Add sautéed veggies to the eggs. Wrap, serve and enjoy.
